Coconut Cream Pie Overnight Oats – a healthy start in the morning
Week two of our California trip has already started. Last week we were in San Francisco. Such a beautiful city. Good food, beautiful landscape, cool spirit, and lovely people. The difference between California and Austria is huge. Although Austria is a beautiful country, I would love to live in California because I’m totally into the lifestyle of the Californians.
Starting from San Francisco, we drove along the Highway 101 and parts of the Pacific Coast Highway #1 to Los Angeles. Bummer that we weren’t able to drive just on the Highway #1 because parts of it were buried at the beginning of the year.
Now we are in Los Angeles, and I have to say that THIS is our city. I love everything here. I will face a hard time on Sunday when we fly back home. But although I’m leaving I will keep the Californian spirit in my heart. Check out on Instagram @alsothecrumbsplease what I’m currently doing.
Since I am in California, I have an extended and very delicious breakfast every morning. To make sure that you also have delicious breakfast, I had made these Coconut Cream Pie Overnight Oats in advance before I flew to California. Because there is no added sugar, you can start the day healthily.
Coconut Cream Pie Overnight Oats – intensive coconut flavor
I used coconut milk and also flakes. Double coconut in the game today. This leads into an intense coconutty flavor with every bite. It’s strongly present and dominating.
Because of using coconut milk these oats are also vegan. Not that I’m living vegan, but I eat vegan about 1-2 times per week for my health and also for the planet. Livestock breeding results in increasing greenhouse gas emissions.
Sweet and Creamy Coconut Cream Pie Overnight Oats
These oats are super creamy. But when I call for “cream pie” oats, they need to be super creamy, right?
The sweetener of choice is agave syrup. It fits perfectly to the coconut flavor of these overnight oats. The taste is a tiny little bit like honey. I use agave syrup for exotic fruits like papaya or mango. But you can use maple syrup, honey, or even coconut sugar as well for sweetening. Just replace it 1 by 1.

- 1/2 cup oats (60g)
- 2/3 cup coconut milk (160ml)
- 2 tbsp coconut flakes
- 1 tbsp agave syrup
- pinch of salt
- 2 tbsp almond flakes for sprinkling
Stir oats, coconut milk, coconut flakes, agave syrup, and a pinch of salt together in a jar. Sprinkle with almond flakes. Cover and store in the fridge overnight. Enjoy the next day.
