This is a killer recipe for your cookbook. It comes together in just 5 minutes and is loaded with lots of flavors. If you are not into hot food, just leave the jalapeno pepper. I love to spice up everything and especially the combination of the creamy avocado with the hot jalapeno pepper is totally awesome. When you like hot food but not used to eat it regularly, start with just 1 jalapeno pepper.
All you have to do is grating the parmesan cheese, cut avocado, garlic, and jalapeno pepper into a few pieces and put everything together into the food processor. Grind on high speed for about 2 minutes until the Avocado Pesto is creamy and even. The Avocado Pesto will last in the refrigerator for up to 3 days. Just put it into a jar and cover with olive oil.
The olive oil on top prevents the Avocado Pesto from turning brown because no oxygen comes into the pesto. When you take a portion out of the jar, pour the olive oil out of the jar, then take your portion out of the jar, and then pour the olive oil back on top of the Avocado Pesto.
There are many possibilities how to eat this Pesto. Eat it with pasta (this is my absolute fav!). Therefore, roast some cherry tomatoes, and put them together with the Pesto over the cooked pasta. Then top with more parmesan cheese and a few basil leaves. This is the perfect easy dinner or lunch recipe. It’s light, creamy, and hot. - 2 ripe avocados
- 3 oz parmesan cheese shredded
- 1 oz basil leaves
- 4 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1 garlic glove
- 2 jalapeno pepper
- 1/4 tsp salt
- 1/8 tsp pepper
Grate the parmesan cheese, cut avocado, garlic, and jalapeno pepper into a few pieces and put everything together into the food processor. Grind on high speed for about 2 minutes until the Pesto is creamy and even. Transfer into a jar, cover with extra olive to prevent the pesto from turning brown and seal the jar. Store in the refrigerator up to 3 days.
If you don't like hot food, just leave the jalapeno pepper. If you like hot food in general, but you are not used to eating hot on a regular basis, start with adding just one jalapeno pepper.
