Do you see this Cookie? It’s my new favorite one! I love Peanut Butter! You already know that. And I love super soft Cookies too. The 3. thing I really love is Jelly. Jelly in combination with Peanut Butter. So the conclusion is that these three have to come together. Bingo!

These three are meant to unite an alliance. A superlative deliciousness alliance! They send you straight to your most beloved PB&J memories way back to your childhood. Did you also love PB&J sandwiches which you had for lunch in school? I did and still do. But now I love them at work, not in school, you know? I love the combination of these two complementary flavors. The interaction of salty and sweet is beyond words.
Soft and easy Peanut Butter and Jelly Cookies
Every time I looked for a Peanut Butter and Jelly Cookie recipe, the most hits were Thumbprint Cookies recipes. I know that they are delicious as well, but I’m more into soft Cookies with a filling inside. Thumbprint Cookies are more firm in general because they need to keep their shape because of the Jelly on top. The next thing is that the Jelly is more firm after baking because it dries out a bit.
But I don’t want hard Cookies with dry Jelly on top I want to have the real PB&J indulgence in the form of a soft cookie with a soft Jelly in the center. If you are with me, then we are going to have an exciting PB&J time in front of us.
These Peanut Butter and Jelly Cookies are super easy to make and 100% failproof. You don’t need to get scared when you make these Cookies. The Jelly won’t come out throughout baking. In the picture, you can see, that there is a simple trick to keep the Jelly inside the Cookie. Just separate one Cookie dough piece into two smaller pieces, flatten both, place 1/2 tbsp Jelly on the bottom layer, lay top layer on top, seal edges with your fingers and that’s it.
Neither is it a mess while making the Cookies. Just follow the pictures and the instructions, and you will see, you will get the best Jelly filled Cookies you will ever have.

These easy Peanut Butter and Jelly Cookies are super soft, have an intense PB flavor and a sweet Jelly filling. 100% failproof.
- 1/2 cup butter
- 1/2 cup peanut butter
- 1/2 cup brown sugar
- 1/8 cup white sugar
- 1 medium sized egg
- 1 vanilla bean
- 1/2 cup + 4 tsp flour
- 1/3 tsp salt
- 1/2 tsp baking powder
- 6 tbsp jelly
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
With a handheld or stand mixer fitted with a paddle attachment mix butter, peanut butter, sugars together until just combined. Add egg and vanilla* and beat until incorporated. Add flour, salt, baking powder and mix just until combined. Do not overmix at any point.
Separate cookie dough into 12 equal sized pieces. Separate every piece into two smaller pieces, flatten both, place 1/2 tbsp jelly on the bottom layer, lay top layer on top and seal edges with your fingers.
Let bake for about 11-13 minutes, until the surface isn't shiny anymore and look pale. Let cool on the baking sheet for about 5 minutes then transfer to a wire rack and let cool completely.
They will stay fresh in an airtight container for up to 4 days.
*First, cut off the straight end of the vanilla bean. Then place the tip of your sharp knife below the curled end and cut the vanilla bean through the middle of the bean lengthwise. Although you don't need to cut it all the way through, it's ok when you do so. Then open the vanilla bean and scrape out the flavorful seeds with the back of your knife. Just use the seeds.
