These Lemon Custard Bars are sour and sweet and will satisfy your lemon cravings. Buttery shortbread crust meets intensive lemony lemon curd. You won't be able to stop eating these.
- 6 medium eggs
- 2 1/2 cups granulated white sugar (500g)
- 1 tbsp lemon zest
- 1 cup lemon juice (240ml)
- 3/4 cup flour (90g)
- 7/8 cup butter (200g)
- 2 cups flour (240g)
- 1/4 cup granulated white sugar (50g)
- 1/4 tsp salt
Preheat oven to 350° F (175°C) and line a 9x13 inch baking pan with parchment paper and set aside.
Shortbread Crust: With a handheld or stand mixer fitted with a paddle attachment beat butter with sugar on medium speed until soft for about 2 minutes. Add flour and salt and mix just until combined. Transfer to the prepared baking pan and press the crust into the pan with your fingers evenly. Bake for about 18-20 minutes until golden brown. Then remove from oven and let cool until you are finished with the lemon curd filling. Don't turn off the oven.
Lemon Curd: Meanwhile beat eggs, lemon zest, and sugar until the sugar is completely dissolved. Add flour and mix just until incorporated. Slowly add lemon juice and mix on low speed just until combined. Pour onto crust. Bake for about 30-35 minutes until filling is set. Cover with parchment paper for the first 25 minutes to prevent browning too much.
Let cool completely then transfer to the fridge. Before serving, sprinkle with sifted powdered sugar and lemon zest. The Lemon Custard Bars will stay fresh in the refrigerator in an airtight container for up to 3 days.
