One Sheet Baked Salmon with Asparagus – easy power food
The countdown is running towards our holidays. California, I’m waiting for you! The last time I traveled was way back in 2008. Honeymoon in Cuba. It was an off-the-cuff decision. On the same day Mario and I married, we went into a travel agency with our wedding present and said: “We want to fly to somewhere in the Carribean or something like that, and we want to fly NOW.” It was super exciting. I’ve never acted on impulse like that before.
Cuba! 10 days Varadero and 4 days Havanna. The first 10 days were relaxing but also kind of boring after a while. Sleeping, eating, swimming, layin’ on the beach, eating, swimming, layin’ at the pool, eating, sleeping. We didn’t know this before, but we found out that we want to see more of the culture and want to be where things are going on. It was cool to do nothing for the first 4-5 days, but after the 6th day, we started to make trips through the country by bus.
The coolest part of our holidays was the 4 days in Havanna. We walked the whole day through the city and were eating such delicious. Because I was thinking about our Cuba holidays, I was inspired to make something with fish today.

This One Sheet Baked Salmon with Asparagus is a light and healthy meal. 500 calories per serving & 45 grams protein. Super easy to make power food!
- 4 pieces salmon (about 2 lbs)
- 2 tbsp butter
- 1 tbsp lemon juice
- 4 medium sized garlic cloves
- 1/4 tsp thyme (dried)
- 1/4 tsp rosemary (dried)
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 lbs green asparagus
- 1 lemon
Preheat oven to 400°F (205°C). Line a large baking sheet with parchment paper and set aside. Cut off the dry ends of the asparagus and set aside. Mince garlic cloves very finely and set aside. Cut lemon in slices and also set aside.
Melt butter in the microwave until completely melted for about 20-30 seconds. Add freshly squeezed lemon juice, garlic, thyme, rosemary, salt, and pepper and stir to combine. Brush all over salmon and asparagus. Arrange salmon and asparagus on the baking sheet and pour remaining butter mixture over salmon and asparagus evenly. Place lemon slices on top and bake for about 13-15 minutes. Do not overbake otherwise the salmon will be dry.
Enjoy immediately or store in an airtight container in the fridge for up to 1 day.
