Peach Cobbler Overnight Oats – as good as the real stuff
With having summer, we have lots of fantastic seasonal fruits to eat. I recommend mainly eating seasonal fruits. It’s funny to eat strawberries in winter with having 32°F in the heart of Europe in my opinion. Not just because of the strawberries in winter taste like nothing, it isn’t environmentally friendly either.
Ok enough chatting about watery winter strawberries, let’s come to the point right now. These Peach Cobbler Overnight Oats are as delicious as the real stuff. I’m always happy like a small child when I have a dessert like breakfast.
Make ahead Peach Cobbler Overnight Oats for Breakfast
The best part of having Peach Cobbler Overnight Oats for Breakfast is that you make them the day before and put them into the fridge and let it do all the work. You can sleep about 15 minutes longer, and you will be much more relaxed in the morning without all the breakfast making stress. Just grab the jar full of sweet Peach Cobbler Overnight Oats out of the fridge in the morning and top it with granola. The granola adds an extra crunch to your oats. The combination of creamy oats and crunchy granola is awesome.
I used my Super Nutty Granola for topping. Make your own granola is highly recommended to make sure that you have full control of what you eat in the morning. Don’t start your day with palm oil or preservatives.

- 2 fresh peaches sliced or cubed (about 1 cup)
- 1/2 cup oats (60g)
- 1/2 cup milk (120ml)
- 1/4 cup greek yogurt (35g)
- 1/2 vanilla bean
- 1/4 tsp cinnamon
- 2 tbsp maple syrup
Stir all ingredients together until fully combined and transfer into a jar. Store in the refrigerator overnight. Enjoy the next morning.
OPTIONAL: I highly recommend adding additional yogurt and peach slices on top and sprinkle with granola before serving.
*First, cut off the straight end of the vanilla bean. Then place the tip of your sharp knife below the curled end and cut the vanilla bean through the middle of the bean lengthwise. Although you don't need to cut it all the way through, it's ok when you do so. Then open the vanilla bean and scrape out the flavorful seeds with the back of your knife. Just use the seeds.
