Inspired by Greek, I made Stuffed Zucchini Boats today to get you in holiday mood too.

Feta – Greek Yogurt – Oregano – Beef
The filling of these Stuffed Zucchini Boats is very delicious and juicy. I used lots of feta cheese, beef, cooked quinoa, Greek yogurt, garlic, oregano, salt, and pepper. You can use cooked rice instead of quinoa if you like it better. Just replace it 1 to 1.
Feta cheese has a salty and tangy taste with a rich aroma. It fits perfectly into the filling because it adds so much flavor to the zucchini boats. The Greek yogurt leaves the filling extra juicy. Oregano is very popular in Greek and is used in many Greek or Mediterranean recipes and comes perfectly along with the feta cheese and the beef.

- 3-4 large zucchinis (about 800g - 1.75 lbs)
- 1 cup feta cheese (150g)
- 10 oz ground beef (300g)
- 3 garlic cloves
- 1 cup cooked rice or quinoa (170g)
- 1 cup yogurt (135g)
- 1/3 tsp salt
- 1/4 tsp pepper
- 1/2 tsp oregano dried
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
Split zucchinis in two halves lengthwise and carefully hollow out with a spoon that the zucchinis have the shape of boats with about 1/4 inch thickness. Save the half of the pulp, cut it into little pieces, and discard the rest. Set aside.
Cut feta into 1/2 inch cubes and stir with all other ingredients and the reserved pulp together until combined. Spoon into zucchinis and transfer to the baking sheet. Bake for about 40-45 minutes.
Enjoy immediately or store in an airtight container in the refrigerator for up to one day.
OPTIONAL: Serve with additional Greek yogurt and lemon slices.
