How to Make The Best and Fluffiest Dinner Rolls

1. Knead the dough.

Tip: Knead it on low speed just until it comes together. Then let it rest for 20 minutes so that the flour starts absorbing some moisture.

2. Add the butter and knead.

Tip: Gradually add room temperature butter and knead until the dough releases from the sides of the bowl.

3. Do the windowpane test.

Tip: When the dough passes the windowpane test, you know that gluten is sufficiently developed, and the rolls will be soft and airy.

4. Chill the dough overnight.

Tip: Rising overnight in the fridge significantly improves the taste and texture of the rolls. Don't skip it!

5. Let it double in size.

Tip: Let the dough rise in a straight-sided vessel and mark it. You know it's ready to shape when it's airy and full of bubbles.

6. Cut into equal pieces.
