How to Make Thick and Chewy Oatmeal Cookies

1. Cream butter and sugar.

Tip: I recommend using European-style butter for cookies if possible. The higher fat content adds a great taste to the cookies and the texture benefits too.

2. Add egg and vanilla.

Tip: For maximum flavor, pure vanilla extract is best. If you have real bourbon vanilla pods on hand, go for the flavorful seeds.

3. Add dry ingredients and add-ins.

Tip: Old-fashioned oats are the best oats for cookies as they give them the desired chew and texture that we all love so much in oat cookies.

4. Chill the dough.

Tip: Chilling cookie dough makes for better texture and balanced taste. Cookie dough can be refrigerated up to 2 days.

5. Roll, flatten, and bake.

Tip: Don't bake them for too long, or they will dry out. The cookies should look pale, puffy, and slightly underbaked in the center.
