In a large bowl, combine curry powder, sweet paprika, garlic powder, mustard, and soy sauce. Mix well until smooth.
Place the chicken thighs into the bowl with the marinade and toss them until each piece is thoroughly coated.
Cover and refrigerate. Marinate chicken 1-2 hours for flavors to permeate the meat. The longer you marinate, the more intense the flavor will get.
Preheat your air fryer to 380ºF (195ºC). Place the marinated chicken thighs on the air fryer tray or in the basket in a single layer to ensure even cooking.
