Linzer Cookies: Traditional Austrian Recipe - Perfect Christmas Cookies

Unsalted butter Powdered sugar, sifted Egg yolks Salt Cinnamon Vanilla bean* (or 1 teaspoon vanilla extract) Lemon juice All-purpose flour Almond flour Apricot or strawberry jam Powdered sugar

Ingredients

Cream the butter until smooth on medium speed using an electric mixer. Add the sugar and mix again to combine. Add egg yolks, salt, cinnamon, vanilla, and lemon juice. Then, mix flour on low speed and almond flour until just combined.

Divide the dough in half and shape it into discs. Then, wrap the discs tightly in plastic wrap and chill for at least 1 hour. Preheat oven to 350°F and line baking sheets with parchment paper in the meantime.

After chilling, take the discs out and roll them out on a lightly floured surface. Then, using a cookie cutter of your own choice, cut the discs into 2-inch cookies, and place them on the prepared sheets. Bake them for 9-10 minutes.

Cool for 5 minutes on the sheet, then transfer to a rack to cool completely.

Prepare your Linzer Cookies for serving by spreading jam on the bottom and topping each with another cookie. Dust them with powdered sugar if you want to make them extra special!
