Preheat your air fryer to 400ºF or 200ºC.
Prepare the zucchinis by cutting them into thin slices or strips.
In a bowl, beat the eggs.
In another bowl, combine Panko breadcrumbs with grated Parmesan cheese, dried basil, garlic powder, paprika, salt, and pepper.
Place the breaded zucchini pieces on the air fryer tray or basket and lightly sprayed them with cooking oil. You may also use parchment paper.
Put the tray or basket with zucchini into the preheated air fryer and cook at 400ºF (200ºC) for 12 minutes. Note: Be careful, as the walls of the air fryer are very hot. Once the zucchini turns golden and crispy, they are ready. Serve the hot air-fried zucchini with your choice of dipping sauce, such as marinara or garlic aioli.
