This Easter Coconut Bark is fun to make! Just 3 ingredients and super easy to make. White chocolate - coconut oil - coconut flakes. Let the fun begin.
Chop the white chocolate coarsely and melt in the microwave. Stir every 20 seconds to avoid seizing.
OPTIONAL Choice #1: Divide coconut flakes into 3 equal portions and put them in a zip-top bag. Then add one drop of food coloring into each zip-top bag. Shake and scrunch it until the coconut flakes are colored evenly.
OPTIONAL Choice #2: Separate chocolate into 3-4 equal portions and add one drop of food coloring to each portion and stir until colored evenly. Make sure to use food coloring which works with chocolate.
OPTIONAL Choice #3: Save a bit of white chocolate and separate the saving into 2-3 portions and color it.
Then add coconut oil and 2/3 of coconut flakes to the chocolate and stir to combine. Pour onto a parchment paper layered baking sheet and sprinkle with remaining coconut flakes and/or colored topping. Let set at room temperature for about 1 hour. Once hardened, cut into pieces.
Store in an airtight container at room temperature for up to 1 week or freeze for up to 1 month. When you freeze it thaw overnight in the refrigerator.
