Cook pasta according to the instructions.
Slice mushrooms and saute over medium-high heat for about 5 minutes. Add ricotta and crushed tomatoes or passata and cook for about 5-10 minutes to thicken. If you don't get any passata but want to have a smooth consistency without any tomato chunks in your pasta, grind crushed tomatoes in the food processor to get a smoother consistency before adding to the other ingredients.
Strain pasta and add to ricotta cream. Add parmesan and stir just until combined. Season with salt and pepper to taste, sprinkle with some additional parmesan and enjoy immediately.
