  • 20 ladyfingers
  • 2 cups mascarpone cheese (450g)
  • 2/3 cup powdered sugar (80g)
  • 2 cups vanilla bean ice cream (350g)
  • 1/4 cup black coffee (60ml)
  • 2 tbsp unsweetened cocoa
  1. Line an 8-inch loaf pan with plastic wrap with a 3-inch overhang on the sides.

  2. Beat mascarpone cheese with sugar and vanilla bean ice cream until combined and smooth. Set aside.

  3. Dip 1/3 of the ladyfingers into coffee and line the bottom of the prepared pan. Then spoon 1/3 of the mascarpone creme onto ladyfingers evenly. Repeat two more times. Cover with plastic wrap. Freeze for about 4 hours until firm or up to 1 week. Remove plastic wrap and let stand for 10 minutes. Sprinkle with cocoa before serving.
