Vanilla cake is very popular in the U.S. There are two main versions of vanilla cake. Yellow and white cake. Although there are both vanilla cakes, there is a difference between both of them:
- Yellow Cake = using whole eggs
- White Cake = using just egg whites
As you can mention, white cake is a brighter and whiter version of yellow cake. That’s the reason why white cake is often used for wedding or birthday cakes.
As you can see the color of this Vanilla Cake recipe in my pictures, I made Yellow Cake today. Made with real vanilla! I added one vanilla bean instead of vanilla extract. To be honest with you….I really have a thing for real vanilla. The flavor is so intense and lovely. These little black vanilla dots within a real vanilla spiced baking good are so adorable! In all my recipes where vanilla is used, real vanilla is used.
Because I regularly bake, my vanilla bean demand is huge. My husband Mario and I, both of us eat about 1 vanilla bean per week. But this has definitely to be seen as positive because vanilla has a positive effect on the mood. Maybe this is the reason, why I’m also in such a good mood…..or because of the sugar.
This Yellow Cake recipe is lovely sweet and loaded with Bourbon-Vanilla, and the best: it’s super easy, quick, and you need only 1 bowl! This sounds like a WIN-WIN-WIN situation.
Whisk butter and sugar in a large bowl. Then stir in one egg after another and vanilla (*YAY*). Then add flour, baking powder, and mix until the batter is even. Now stir in milk and mix until your Yellow Cake dough is smooth. Fill the dough into a parchment paper layered 10×5 inch baking form. Then put it into the preheated oven.
Today, I filled my Yellow Cake with strawberry jam and glazed it with white chocolate ganache. With this Yellow Cake recipe, you can do everything! Spread cream cheese frosting all over it, or buttercream, or chocolate, or fill it with vanilla- or chocolate pudding cream, or top it with whipped cream and raspberries, or make Cake Pops out of it, or just enjoy it pure, or, or, or…..

- 3/4 cup granulated white sugar
- 1/2 cup butter
- 2 medium size eggs
- 1 vanilla bean
- 1 1/2 cup all-purpose flour
- 1 3/4 tsp baking powder
- 1/4 cup milk
- Preheat oven to 175°C (350°F) and line a 10x5 inch baking form with parchment paper.
- Whisk together butter and sugar in a large bowl, until it is evenly combined.
- Stir in one egg after another and vanilla*. Mix it through for about 1 minute, until it's fully incorporated.
- Whisk in flour and baking powder.
- Then stir in milk until the Yellow Cake dough is smooth. About 1-2 minutes.
Then fill the batter in prepared baking form and let it bake for about 30-35 minutes. When the surface bounces back when you push it with your finger, your Yellow Cake is done.
- Let it cool completely.
- Your Yellow Cake will last in an airtight container for up to 4 days.
*First, cut off the straight end of the vanilla bean. Then place the tip of your knife below the curled end and cut the vanilla bean through the middle of the bean lengthwise with a sharp knife. Although you don't need to cut it all the way through, it's ok when you do so. Then open the vanilla bean and scrape out the flavorful seeds with the back of your knife. Then just add the seeds to your dough.
