Peanut Butter Filling: Peanut butter Powdered sugar Chocolate Cookies: Unsalted butter White sugar Brown sugar Egg Vanilla extract All-purpose flour Cocoa powder Baking powder Salt

Ingredients

Whisk peanut butter and powdered sugar together in a large mixing bowl. Then scoop out 12 peanut butter balls and freeze them until you’re ready to make the cookies. Meanwhile, preheat the oven to 350°F (or 175°C) and line 2 baking sheets with parchment paper.

1

In another bowl, whisk butter and sugar on medium speed with an electric mixer. Do so for about 1 minute or until combined. Add the egg and vanilla. Mix to combine. Then mix in flour, cocoa, baking powder, and salt until incorporated. Don’t overmix.

2

Divide the dough into 12 equal pieces and place them on your baking sheets spaced 2-3 inches apart. Remove the peanut butter balls from the freezer and place one at the center of each dough piece.

3

Roll your dough into balls but leave a ½ inch hole at the top so that the peanut butter is still visible. Bake one sheet at a time for 10-11 minutes.

4

Let your Buckeye Cookies cool and bite into the gooey delight of their peanut butter center! Serve with milk or tea.
