Easy Gingerbread Men Cookies

All-purpose flour Baking powder Salt Ground ginger Ground cinnamon Allspice Ground cloves Ground nutmeg Unsalted butter Brown sugar Unsulphured molasses Egg Vanilla extract Icing (optional): Powdered sugar Water Salt

Ingredients

Mix flour, baking powder, salt, ginger, cinnamon, allspice, cloves, and nutmeg in a large bowl. Set aside.

In another bowl, beat butter for 1-2 minutes or until creamy using an electric mixer. Add brown sugar, molasses, egg, and vanilla and mix. Add the dry ingredients you prepped earlier and mix. Continue mixing on low speed until the dough is sticky and thick.

Continue kneading the dough. Divide it in half then shape the dough into discs. Wrap the discs in plastic wrap. Refrigerate for at least 3 hours. Meanwhile, preheat the oven to 350°F (or 175°C) and line 3 baking sheets with parchment paper.

Roll out the dough discs on a well-floured surface. They should have a thickness of about ¼ inch. Once ready, cut the dough discs into cookies using a gingerbread man cutter. Place them on the baking sheets with an inch of space apart. Bake for 8-9 minutes.
