Peanut Butter and Jelly Cookies

Jelly or jam Unsalted butter Peanut butter Brown sugar Egg Vanilla extract All-purpose flour Baking powder Salt

Ingredients

Preheat the oven to 350°F (or 175°C) and line 2 baking sheets with parchment. Set aside for now. Then, spoon 12 ½ tablespoon dollops of your favorite jelly or jam on a paper-layered plate. Freeze them while you’re prepping the dough.

In a large bowl, whisk butter and sugar together using an electric mixer. Add egg, vanilla, and peanut butter. Beat your ingredients until combined. Then, add flour, baking powder, and salt. Mix until combined. Be careful not to overmix!

Divide your dough into 12 even balls. Remove the jelly from the freezer. Divide each dough ball into two. Form one half into a disc and fill it with a dollop of jelly. Form the other half into a disc and place it atop the jelly. Pinch the sides of your discs with your fingers to seal the jelly in. Once done, you may now bake your cookies for 11-13 minutes.
