Homemade Honey Substitute

While you already have several choices for the best honey substitutes, learning how to make bee-free honey at home is a handy skill. If you have been baking for a while, you surely have all the ingredients in your arsenal.
Just note that this homemade honey alternative won't be as thick as real honey. Still, it will bind the ingredients well and give your baked goods the right amount of sweetness.

Equipment

  • 2 large saucepans
  • laddle
  • fine-mesh sieve
  • 300ml glass jar with a lid

Ingredients

  • 10 cup brown sugar
  • 3 cup water
  • 1 teaspoon alum or lime juice
  • 1 teaspoon rose extract or any flower extract

Instructions

  • Put the brown sugar, water, and alum in your saucepan. If you're using lime juice instead of alum, please don't add it yet.
  • Bring to a boil over medium heat.
  • Once boiling, reduce the heat to a medium setting, add the lime juice, and stir.
  • While stirring, allow the solution to simmer for 10 minutes or until it thickens.
  • Remove your saucepan from the heat.
  • Add the flower extract and stir.
  • Place your fine-mesh sieve over your second saucepan and slowly pour your homemade honey substitute. This step helps strain out any undissolved brown sugar.
  • Bring the strained mixture to a boil over low heat.
  • Once done, slowly pour your homemade honey substitute into your glass jar. Allow to cool before placing the lid.
  • Store in a cool, dry place.

Notes

  • You can replace the flower or rose extract with 2.5c of rose petals or clover blossoms. Make sure you wash them thoroughly before adding to the mixture.
  • This homemade substitute for honey will last up to six months when stored properly. If you notice crystallization or cloudiness, it's time to discard it whether it has reached the six-month period.
  • Use stevia or coconut sugar instead of sugar for a low-carb or keto-friendly substitute for honey.
