Put the brown sugar, water, and alum in your saucepan. If you're using lime juice instead of alum, please don't add it yet.
Bring to a boil over medium heat.
Once boiling, reduce the heat to a medium setting, add the lime juice, and stir.
While stirring, allow the solution to simmer for 10 minutes or until it thickens.
Remove your saucepan from the heat.
Add the flower extract and stir.
Place your fine-mesh sieve over your second saucepan and slowly pour your homemade honey substitute. This step helps strain out any undissolved brown sugar.
Bring the strained mixture to a boil over low heat.
Once done, slowly pour your homemade honey substitute into your glass jar. Allow to cool before placing the lid.
Store in a cool, dry place.
