  • Wash all the vegetables thoroughly.
  • Slice the eggplant, onion, and tomato into rings of roughly equal thickness. Cut the bell pepper into strips. Slice the onion into thin rings or half rings.
  • Preheat your air fryer to 350ºF (180ºC).
