- 2 ⅓ cups all-purpose flour (280g)
- ½ teaspoon salt
- ½ teaspoon sugar
- 1 cup cold butter (226g)
- 6 tablespoon cold water (90ml)
blackberry filling
- 5 cups fresh blackberries (650g / 23oz)
- 1 tablespoon lemon juice (15ml)
- 2 vanilla beans* (or 1 teaspoon vanilla extract)
- ½ cup granulated white sugar (100g)
- ¼ cup cornstarch (28g)
- pinch of salt
- 1 tablespoon cold butter
brush pie crust with 1 egg and sprinkle with 1 tablespoon coarse sugar before baking
*First, cut off the straight end of the vanilla bean. Then place the tip of your sharp knife below the curled end and cut the vanilla bean through the middle of the bean lengthwise. Although you don't need to cut it all the way through, it's ok when you do so. Then open the vanilla bean and scrape out the flavorful seeds with the back of your knife. Just use the seeds.
