For Both Methods
- 1 lb okra beans cut into 2–3 pieces
- 1 tablespoon olive oil
- 2 tablespoon all-purpose flour or gluten-free
- 1 teaspoon salt
- 1 teaspoon garlic powde
- 1 teaspoon onion powder
- 1 teaspoon sweet paprika
- ½ teaspoon black pepper
For Crumbed Air Fryer Fried Okra
- 2 eggs
- 2 tablespoon flour in addition to the other two
- ½ cup breadcrumbs
To serve:
- Lemon wedges
- Dipping sauce of choice
Prepare the okra
Cut okra beans into 2-3 pieces. You can cut off the tails if they are extra firm but not essential, they cook through and become tender.
Whisk eggs in a bowl. Add the okra, stir to coat, and let sit for a few minutes.
In a bowl, combine the breadcrumbs, 4 tablespoons flour, salt, pepper, garlic powder, onion powder, and paprika.
Working in batches, dip the okra from the egg mixture into the crumb mixture, coating well.
Air fry the okra:
Arrange in the air fryer basket with space between pieces. Spray lightly with oil.
Air fry for 6–7 minutes, shake or turn, spray lightly again, then air fry for another 5 minutes or until golden and crispy.
- Don’t overcrowd the basket: air needs to circulate for crispiness.
- Use panko for extra crunch: especially for the crumbed version.
- Want more spice? Add cayenne, chipotle powder, or chili flakes.
- Gluten-free option: use GF flour + GF breadcrumbs.
- Make ahead: cut the okra ahead of time and refrigerate; coat + cook just before serving for best texture.
- Storage: store cooked okra in an airtight container for up to 2 days; re-air-fry 3–4 minutes to re-crisp.
- Freezing: crumbed version freezes best — freeze uncooked coated okra on a tray, then bag; air fry from frozen, adding 3–4 extra minutes.
