Eggnog Cheesecake with Gingerbread Crust

Ingredients

Prepare your gingerbread crust. Stir cookie crumbs and melted butter together. Add sugar and salt.

Once you have achieved a moist consistency, press the crust into the pan. Make sure that the crust is pressed tightly throughout the bottom and halfway up the sides. Freeze it as we’re making the filling.

Combine the ingredients of your cheesecake filling. In a large bowl, beat cream cheese, sugar, and flour together. Then, add nutmeg, cinnamon, vanilla, and rum.

Add one egg at a time. Be sure to mix the first one until well combined before adding the next egg. Then, add your eggnog and mix until smooth.

Pour your filling into the crust. Spread evenly. Bake your cheesecake for 50-60 minutes or until the edges look puffed and browned.

Let your cheesecake set for at least 3 hours or better yet, overnight.
