Preheat the air fryer to 340°F (170°C).
If using tomatoes, slice them, finely chop the shallots, prepare lettuce leaves, and get the cheese ready. Make slight indentations in the bread slices, which can easily be done using a cup or similar object.
Once the air fryer is preheated, arrange the bread slices on the bottom of the basket. Carefully crack an egg into each of the indentations.
Allow them to air fry for approximately 10 minutes. If you prefer your yolk to be runny, reduce the time to 7-8 minutes.
After 10 minutes, add shallots and cheese on top of the bread. Continue air frying for an additional 2-3 minutes.
Once the toast is cooked, transfer it to a plate. Take one slice and layer it with the sliced tomatoes and crisp lettuce leaves. Cover with the other slice, cheese side down.
Serve the toast while it's still hot. You can also add your favorite herbs or sauces. Fresh basil and sriracha sauce make great additions.
