Starting my day with this air fryer breakfast egg toast recipe has transformed my mornings. There's something special about taking a beloved dish and giving it a fresh spin.

While many recipes call for stovetop frying or oven-baking, using an air fryer gives this toast a unique crispiness that's hard to resist. And let's face it: a perfect crunch in the morning sets the tone for a great day.
The ease, speed, and unbeatable texture of this method make it my preferred version, and I believe that after one bite, you'll feel the same.

Ingredients

- 2 slices of bread
- 2 eggs
- salt and pepper to taste
Optional Toppings
- lettuce leaves
- sliced tomatoes
- cheese
- shallots
Kitchen Tools and Equipment Needed
- Air fryer
- Small plate
- Knife
- Cutting board
- Cup
Instructions
Preheat the air fryer to 340°F (170°C). I’m using my ever trusted Instant Vortex Plus XL. If using tomatoes, slice them, finely chop the shallots, prepare lettuce leaves, and get the cheese ready.
Make slight indentations in the bread slices, which can easily be done using a cup or similar object.

Once the air fryer is preheated, arrange the bread slices on the bottom of the basket. Carefully crack an egg into each of the indentations.

Allow them to air fry for approximately 10 minutes. If you prefer your yolk to be runny, reduce the time to 7-8 minutes.

After 10 minutes, add shallots and cheese on top of the bread. Continue air frying for an additional 2-3 minutes.

Once the toast is cooked, transfer it to a plate. Take one slice and layer it with the sliced tomatoes and crisp lettuce leaves. Cover with the other slice, cheese side down.

Serve the toast while it's still hot. You can also add your favorite herbs or sauces. Fresh basil and sriracha sauce make great additions.

Tips for Adjusting the Cooking Time and Temperature
- Always remember that air fryers can vary in performance. While I use my Instant Vortex Plus XL set at 340°F (170°C), it's essential to know your machine. A few trial runs may be required to perfect your toast.
- If your toast comes out too soft or too crispy, adjust the temperature by 10°F and check the results.
- The thickness of your bread slices can affect cooking times. Thicker slices might need an extra minute or two.
Serving Recommendations
- This breakfast egg toast pairs well with a refreshing fruit salad or a light yogurt parfait.
- A hot cup of coffee or tea, or even a fresh fruit smoothie, can be the perfect drink to accompany this dish.
- Consider serving with a side of avocado slices or roasted potatoes for a hearty breakfast.
Recipe Variations and Substitutions
- You can easily swap the bread for whole grain, sourdough, or gluten-free options.
- Feel adventurous? Try using flavored cheese like pepper jack or smoked gouda to add an extra kick.
- Replace the shallots with finely chopped onions or chives for a different flavor profile.
Leftovers Storage
If you have any leftovers, which I doubt, given how tasty this is, store them in an airtight container in the fridge.
When reheating, it's best to use the air fryer for a few minutes rather than the microwave to retain the toast's crispiness.
Try to consume the leftovers within a day or two for the best taste and texture.
Pro Tips for Success
- When making the indentations in the bread, ensure you don't push through entirely, or the egg might leak.
- If you're aiming for a softer yolk, keep a keen eye on your toast around the 7-minute mark.
- For a truly indulgent treat, consider brushing the bread with a touch of melted butter or olive oil before air frying. It'll give the toast an extra layer of golden deliciousness!
