Gelatin Substitute
If you're out of gelatin or need a plant-based option, this simple gelatin substitute works well for thickening desserts, sauces, and more.

- 1 tablespoon gelatin powder or 3 gelatin sheets (for a 1:1 substitute)
- 1 tablespoon corn starch
- 1 tablespoon vegetable gum (for vegan-friendly recipes)
If using gelatin sheets, soak them in cold water for 5 minutes until soft, then squeeze out excess water.
If using gelatin powder, sprinkle it over cold water and let it bloom for 5 minutes.
If using corn starch, mix it with cold water until dissolved.
Heat the mixture in a small saucepan over low heat, whisking until fully dissolved.
Remove from heat and let it cool slightly before using in your recipe.
- Corn starch works best for thickening sauces and custards but may create a brittle gel in some recipes.
- Vegetable gum is a great vegan alternative for firm gels.
- Cream cheese can add stability and texture in creamy desserts.
