Peach Tarte Tatin
This peach tarte tatin is one of those desserts that feels like you ordered it at a French bakery… but it’s actually shockingly easy to make at home.

- ½ cup granulated sugar
- 4 tablespoon unsalted butter
- 5 ripe peaches, quartered and pitted
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- pinch of salt
- 1 sheet puff pastry, thawed
Preheat the oven to 400°F (200°C). In a 9 - 10 inch oven-safe skillet, melt sugar over medium heat until it turns amber. Add butter carefully and stir until smooth. Remove from heat.
Arrange the peach cut-side up tightly over the caramel. Drizzle with lemon juice, vanilla, and a pinch of salt.
Place puff pastry over the peaches, tucking edges down around the fruit inside the pan. Prick pastry lightly with a fork.
Bake for 30 minutes, until pastry is deep golden and caramel is bubbling.
Cool for 5 minutes, then carefully invert onto a serving plate. Serve warm.
Taste & Texture

Soft, jammy peaches
Rich caramel sauce coating every bite
Storage, Freezing & Reheating
Storage:
I store leftovers in the fridge for up to 2 days (though it rarely lasts that long).
Reheat:
Warm in the oven at 350°F (175°C) for about 10 minutes.
Freezing:
Not recommended — caramel doesn’t thaw back with the same silky texture.
