Equipment

  • Air Fryer
  • Small bowl
  • Small bowl
  • Silicone pastry brush
  • Kitchen tongs
  • Fork
  • Serving platter

Ingredients

  • 8 small sausages
  • 2 sheets chilled puff pastry
  • barbecue sauce to taste
  • 1 egg

Instructions

  • Slice 2 sheets of chilled puff pastry. Cut each sheet into 4 pieces to create a total of 8 pastry pieces.
  • Note: The puff pastry should be slightly wider than the sausages for easy sealing of the edges.
  • Using a silicone pastry brush, lightly coat each piece of pastry with barbecue sauce, ensuring not to spread the sauce all the way to the edges. This will allow for proper sealing when wrapping the sausages.
  • Wrap each sausage snugly in a piece of pastry, sealing the edges by pinching them together to secure the pastry around the sausage.
  • In a small bowl, beat one egg using a fork. Place the sausage rolls into the air fryer basket, and brush them with the beaten egg to achieve a beautiful and crispy golden-brown crust.
  • Set the air fryer (I’m using the Instant Vortex Plus XL) to 360ºF (180ºC) and cook the sausage rolls for approximately 20 minutes. At the 15-minute mark, give them another coat of the beaten egg for extra crispiness.
  • After about 20 minutes, your sausage rolls should be ready with a golden-brown color.
  • Serve while hot and enjoy!

Notes

Cooking Time and Temperature

Air fry at 360°F (180°C) for approximately 20 minutes, brushing with egg again after 15 minutes.

Taste & Texture

Flaky, buttery pastry with juicy sausage inside and a perfectly crisp, golden brown exterior.

Storage, Freezing & Reheating

  • Fridge: Store cooled sausage rolls in an airtight container for up to 3 days.
  • Freezer: Freeze for up to 3 months.
  • Reheat: Air fry at 350°F (175°C) for 2–3 minutes until hot and crispy.

Serving Recommendations

I love serving these warm with barbecue sauce or mustard on the side. They also make a great party snack platter alongside cheese, olives, and fresh vegetables.

Recipe Variations and Substitutions

  • Add shredded cheese before rolling.
  • Mix extra herbs and spices into the sausage filling.
  • Add finely diced onion for extra flavor.
  • Use chicken sausages instead of pork.
  • Add cooked bacon for an extra savory twist.

Proper Storage Tips

  • Allow the sausage rolls to cool completely before storing.
  • Store in an airtight container in the fridge.
  • Reheat in the air fryer for the crispiest results.
  • Avoid microwaving if possible, as the pastry can become soft.

Pro Tips

  • Keep the puff pastry chilled until needed.
  • Use a sharp knife when cutting the pastry.
  • Don't overcrowd the air fryer basket.
  • Brush twice with egg for extra color.
  • Line your work surface with parchment paper for easier cleanup.
