How to Make Homemade Sausage Rolls with Puff Pastry
1. Slice 2 sheets of chilled puff pastry. Cut each sheet into 4 pieces to create a total of 8 pastry pieces.
NOTE: The puff pastry should be slightly wider than the sausages for easy sealing of the edges.
2. Using a silicone pastry brush, lightly coat each piece of pastry with barbecue sauce. Do not spread the sauce all the way to the edges. This will allow for proper sealing when wrapping the sausages.

3. Wrap each sausage snugly in a piece of pastry, and seal the edges by pinching them together to secure the pastry around the sausage.
4. In a small bowl, beat one egg using a fork. Place the uncooked sausage rolls into the air fryer basket and brush them with the beaten egg on top of the pastry.

6. Set the air fryer to 360°F (180°C) and cook for approximately 20 minutes.
7. At the 15-minute mark, give them another coat of beaten egg wash for extra crispiness and air fry for about another 5 minutes or until crispy.

8. Once they are golden brown, remove and garnish with fresh herbs like parsley or fresh rosemary. Serve hot with your favorite dipping sauces.
