Try This Easy Molten Lava Cake

If you've always thought making molten lava cake was complicated, and a double boiler is needed, this recipe will completely change your mind. It's honestly so easy to make.

What I love most is cutting into the cake and watching the warm chocolate center slowly flow onto the plate. That's the beauty of these lava cakes. They're perfect for date nights, birthdays, dinner parties, or simply when you're craving small-batch desserts that are rich and chocolatey.

Why You'll Love It

  • Quick dessert: I love that these cakes are good to go in about 30 minutes, making them a fantastic choice whenever a chocolate craving hits.
  • Restaurant quality: You get a rich chocolate lava cake with a perfectly gooey molten center right from your own kitchen.
  • Perfect portions: Everyone gets their own individual dessert, making these ideal for dinner parties or even romantic evenings.
  • Simple ingredients: Everything you need is easy to find, and chances are you already have most of it in your kitchen.

Ingredients

Easy molten lava cake in air fryer ingredients
  • Dark chocolate: Since chocolate is the star of this easy lava cake recipe, I always recommend using good-quality chocolate. It melts smoothly and gives the cakes a rich, deep flavor.
  • Butter: Butter gives you that rich texture and helps the cakes stay soft and moist.
  • Eggs: The eggs give the cakes structure and allow the centers to stay deliciously molten when baked correctly.
  • Cocoa powder: I use cocoa powder to coat the ramekins. It stops the cakes from sticking and gives them a lovely chocolate finish.

How to Make Easy Molten Lava Cake in Air Fryer

1. Melt the chopped chocolate and butter together in the microwave, stirring every 15 to 20 seconds until completely smooth. Let the mixture cool for about 5 minutes.

2. In a large mixing bowl, whisk together the powdered sugar, flour, cocoa powder, and salt.

3. Add the melted chocolate mixture along with the lightly beaten eggs. Gently fold everything together using a rubber spatula until just combined. Don't overmix.

4. Grease four 6-ounce ramekins generously with butter, then dust them with cocoa powder, making sure every surface is coated. This helps the cakes release easily after baking.

5. Divide the batter evenly between the ramekins, filling each about two-thirds full.

6. Preheat your air fryer to 360°F (180°C). Place the ramekins into the air fryer basket, leaving a little space between each one for the air to circulate.

7. Air fry for 8 to 10 minutes. The tops should look set while the centers remain slightly soft. That's what creates the perfect molten middle.

8. Let the cakes rest at room temperature for 1 to 2 minutes. Carefully run a butter knife around the edges before turning each ramekin onto a serving plate.

9. Serve immediately while still warm with your favorite toppings.

Cooking Tips

  • Using good-quality chocolate really makes a noticeable difference in the final flavor. Sweet and semi-sweet chocolate both work well.
  • When combining the chocolate mixture and eggs with the dry ingredients, be careful not to overmix the batter. Overmixing can turn into tough or dry lava cakes.
  • Grease and coat your ramekins well so the cakes slide out easily and you get the cocoa crust.
  • Keep a close eye on the cooking time. Even an extra minute can cook away that delicious molten center.
  • If you're unsure, cook one test cake first since every air fryer works a little differently.
  • You can use a different type of ramekin as long as it's a heatproof bowl and oven-safe. You can also use a muffin tin or a baking dish instead of ramekins.

FAQs

Why didn't my center stay molten?

The cakes were likely baked a little too long. Every air fryer cooks slightly differently, so reducing the cooking time by about a minute usually solves the problem.

Can I reheat it?

Yes, you can reheat the lava cake in the air fryer or microwave. To reheat in the air fryer, preheat the air fryer to 350°F (180°C) and cook the cake for 2-3 minutes, or until warm. To reheat in the microwave, place the cake on a microwave-safe plate and heat in 15-second intervals until warm.

Can I make this recipe in a regular oven?

Yes, you can make this recipe in a regular oven. Preheat your oven to 375°F (190°C) and bake the lava cakes for 12-15 minutes, or until the edges are set but the centers are still slightly gooey.

  • Air Fryer

  • Plates for serving

Ingredients

  • 6 oz 60% chocolate finely chopped
  • ½ cup unsalted butter
  • ¾ cup powdered sugar sifted
  • 2 tablespoon all-purpose flour
  • 2 tablespoon unsweetened cocoa powder
  • pinch salt
  • 2 large eggs lightly beaten
  • 1 tablespoon unsalted butter
  • 1-2 tablespoon cocoa powder

Instructions

  • Add chocolate and butter to a microwave-safe bowl and microwave on high. Stir every 15-20 seconds until fully melted. Let cool for 5 minutes.
  • In a large mixing bowl, whisk together the sugar, flour, cocoa powder, and salt.
  • Add the chocolate mixture and eggs and stir just combine using a rubber spatula. Set aside.

Notes

Cooking Time and Temperature

Air Fryer: 360°F (180°C) for 8-10 minutes

Taste & Texture

These chocolate lava cakes have a delicate cake-like exterior with an irresistibly rich, warm molten chocolate center. Every bite is intensely chocolatey, silky smooth, and incredibly decadent.

Storage, Freezing & Reheating

  • Fridge: Store covered in the refrigerator for up to 2 days.
  • Freezer: Wrap each cake tightly and freeze for up to 2 months.
  • Reheat: Microwave for about 15-20 seconds or warm in the air fryer for 2-3 minutes. Keep in mind that reheating may reduce the molten center slightly.

Serving Recommendations

My favorite way to serve these is while they're still warm with a scoop of vanilla ice cream and a few fresh raspberries. The cold ice cream melting into the warm chocolate is absolutely incredible. They're also beautiful with whipped cream, fresh strawberries, or simply a dusting of powdered sugar.

Recipe Variations and Substitutions

  • Chocolate: You can use any type of chocolate you prefer, such as semisweet or bittersweet chocolate. You can also use chocolate chips instead of chopped chocolate.
  • Cocoa powder: Dutch-process cocoa powder can be substituted for a deeper chocolate flavor.
  • Flavor: Add a splash of vanilla extract, espresso powder, or even a pinch of cinnamon for a different taste. .
  • Toppings: Finish with fresh berries, caramel sauce, chocolate sauce, or chopped toasted hazelnuts.

Proper Storage Tips

  • Allow the cakes to cool completely before storing.
  • Cover each ramekin or store the cakes in an airtight container.
  • Refrigerate for up to 2 days.
  • Freeze individually for an easy make-ahead dessert.

Pro Tips

  • Use good-quality chocolate for the best flavor.
  • Let the melted chocolate cool slightly before adding the eggs.
  • Don't overmix the batter or the cakes can become dense.
  • Grease and dust the ramekins well so they release easily.
  • The secret to the perfect molten lava cake is not overbaking it.
  • Every air fryer cooks a little differently, so I recommend testing one cake first if you're making this recipe for the first time.
  • Serve immediately. That's when you'll get the beautiful flowing center that makes this easy molten lava cake so special.
