Why You Will Love This Recipe

This is my go-to air fryer breaded eggplant recipe—super crunchy on the outside, soft and creamy on the inside, and honestly just so satisfying.
You can serve it as-is with marinara for dipping (yes please) or take it one step further and make the easiest air fryer Eggplant Parmesan (or Parmigiana to be more authentic) —no oven required. Here why you’ll love this recipe:
- I’ve tested breaded eggplant slices a bunch of times, and they always come out crisp, golden, and perfectly seasoned. The breading is light but flavorful, and the air fryer works its magic in about 15 minutes. This is a much healthier way to make fried eggplant.
- Two recipes in one. Serve as crispy slices or turn them into eggplant Parmesan right in the same air fryer basket.
- It’s a great meatless dinner option, but it also makes a killer eggplant sandwich or stack. And if you're into that melty cheese-tomato-sauce Sitch... you're in for a treat.
- Naturally vegetarian and easy to make gluten-free – just swap in GF flour and crumbs.
- Endlessly versatile – Eat it as a main, sandwich filling, snack, or part of a pasta night spread.
Ingredient Notes & Substitutions

- Eggplant – Globe (American) eggplants work best. Fresh ones feel heavy and smooth-skinned. No spongy old guys, please.
- Olive oil – Helps the eggplant brown and adds flavor. You can use avocado oil or garlic-infused oil too. Compared to pan-frying or frying eggplant, you use a much smaller amount of oil when air frying.
- Salt – Essential for seasoning and for making eggplant less dry and less bitter. Don’t skip the salt—eggplant needs it - especially the slightly older ones.
- Garlic powder and Italian herbs – Totally optional, but I love adding one or two for extra oomph.
- For breading—Plain or all-purpose flour for the first step of breading, helps everything stick. Feel free to use gluten-free here; egg helps the breadcrumbs cling (sub with plant-based milk + flour slurry if needed); and breadcrumbs - regular or panko both work. I like panko for max crunch. Gluten-free breadcrumbs will also work!
- For Eggplant Parmesan—Marinara sauce (any good quality jarred one or homemade), Mozzarella cheese (shredded or fresh slices work), Parmesan cheese (adds salty, nutty flavor but you can go without) and fresh basil (optional, but makes it feel fancy and fresh).
Step by Step

Here are some steps and photos for how to make eggplant in the air fryer with breading. Once cooked, you can turn breaded eggplant into eggplant Parmesan (or eggplant Parmigiana)
1. Prep The Eggplant
- Slice eggplant into ½-inch rounds. Salt generously and let sit 15 for minutes.
- Blot well with paper towels to remove moisture and bitterness, and excess salt. The eggplant will remain well seasoned.
- Season eggplant slices with garlic powder and herbs.
2. Bread & Air Fry Eggplant

- Set up your breading station, flour in one bowl, beaten egg in another, breadcrumbs in another bowl or plate. You can add extra garlic powder and herbs to breadcrumbs.
- Before you start, preheat the air fryer to 200°C (400°F). Spray basket with oil.
- Dip each slice into flour → egg → breadcrumbs, pressing gently so it sticks.
- Spray the top side with oil and place in a single layer in the air fryer basket (oiled side down). Spray the opposite side with a little oil as well.
- Air fry for 13-15 minutes, flipping halfway through until golden and crisp.
Serve hot with warm marinara sauce for dipping. Add a little sprinkle of flaky salt or chili flakes if you like a kick. Otherwise, turn them into eggplant Parmesan.
Make Air Fryer Eggplant Parmesan

- Once the breaded slices are cooked, line your air fryer basket with parchment (poke a few holes if needed for air flow).
- Spread a spoonful of marinara on each eggplant slice.
- Top with shredded mozzarella and a sprinkle of Parmesan.
- Air fry at 200°C (400°F) for 8 minutes, or until the cheese is melty and just starting to brown.
- Garnish with torn basil leaves and a drizzle of olive oil if you’re feeling extra.

Expert Tips

- Salting matters. This isn’t just for flavor. It helps the eggplant lose excess water so the breading stays crisp instead of soggy.
- Panko breadcrumbs = next-level crunch. If you have them, use them. I only had regular breadcrumbs for the shoot, which worked just as well.
- Don’t skip the oil spray. Even just a light mist makes a huge difference for color and texture.
- Add some chili flakes or cayenne to the breadcrumb mix for heat.
- Batch cooking tip: Keep slices warm in a 150°C (300°F) oven while you cook the rest or layer for Parm.
- Storage tips: Leftovers can be stored in the fridge for up to 3 days. Reheat in the air fryer at 180°C (350°F) for 5–6 minutes to bring back the crisp. Not ideal for freezing once breaded, but you can freeze uncooked, breaded slices in a single layer, then cook straight from frozen.
- Make ahead tips: Slice and salt your eggplant ahead of time, then store in the fridge layered with paper towels. You can also bread the slices and refrigerate them uncooked for a few hours before air frying.
If you’re looking for a savory, crowd-pleasing appetizer, Air Fryer Sausage-Stuffed Mushrooms are another great option to try.
SERVING SUGGESTIONS
- Serve breaded eggplant slices like vegetarian schnitzels with a lemon wedge and a simple salad. I love to serve marinara sauce or aioli on the side. Cream mushroom sauce is another great pairing.
- Stack in a sandwich or wrap with melty cheese, pesto, or roasted red peppers.
- Eggplant Parmigiana pairs perfectly with pasta, garlic bread, or even a side of sautéed greens.
You may also like Guava cream cheese pastry — a flaky pastry filled with sweet guava and smooth cream cheese.
FAQs
It’s optional, but highly recommended. Salting pulls out excess water, which helps the eggplant stay firm and keeps the breading crispy.
Yes! Use gluten-free flour and breadcrumbs and you’re good to go.
Globe eggplants (the big, round ones) are perfect. They slice up nicely and hold their shape well when air fried.
For the breaded version, swap egg for plant milk + a bit of flour whisked in. For Parmigiana, use your favorite dairy-free cheese shreds.
Yes! Uncooked, breaded slices freeze great. Lay in a single layer, freeze, then air fry straight from frozen. Cooked ones go a little soft, so I’d skip freezing those.
