One of my favorite things about these crispy garlic potatoes is how the thin slices cook to be crispy around the edges, and the centers are soft and buttery.
The air fryer makes the whole enhanced version of traditional baked potatoes much easier than using the oven, and the Parmesan gives you that delicious finish. With only 10 ingredients needed, they are the easiest way to make a good side dish.

How to Make Crispy Garlic Hasselback Potatoes
1. Wash the potatoes thoroughly. There is no need to peel them.
2. Using a sharp knife, create thin slits along each potato, stopping just before reaching the bottom.
Tip: Place a pair of chopsticks or wooden spoons on either side of the potato while slicing to prevent cutting all the way through.
3. Rinse the sliced potatoes under cold water to remove the excess starch.

4. Pat the potatoes dry, place them in a heatproof baking dish or tray, then drizzle olive oil over the potatoes. Mix the dried garlic, oregano, basil, rosemary, salt, and black pepper together.
5. Season the potatoes with half of the herb mixture.

6. Preheat the air fryer to 380°F (180°C). Place the potatoes in the air fryer basket and bake for 20 minutes.
7. Add the remaining herb mixture. Continue cooking for another 25 minutes or until tender and crispy. Test for doneness by inserting a knife or fork into the center.

8. Remove the potatoes from the air fryer and sprinkle with grated Parmesan cheese and fresh basil. You can also add a sprinkle of kosher salt if you like.

9. Serve immediately.
