I also love how customizable these molten cakes are and they are a crowd favorite. Sometimes I serve them with vanilla ice cream, and at other times with fresh berries or a sprinkle of powdered sugar. No matter how I serve them, they never disappoint.

Ingredients

- Semi-sweet or dark chocolate: I always recommend using good-quality chocolate because you need it for the rich molten center. My personal favorites are Ghirardelli and Lindt. Chocolate chips are not recommended as they don't melt as tenderly as high-quality chocolate bars, and the core of the lava cakes wouldn't be gooey
- Butter: This adds richness and is what creates the silky texture that makes these individual chocolate cakes so decadent. European butter gives the best results due to its 82% fat content, but it works just as well with US butter (80%).
- Whole eggs and egg yolks: These help give the cakes structure and keeps the centers soft and gooey.
- Cocoa powder: I like adding cocoa powder for an extra chocolate flavor without making the flavor too rich. You can use either natural cocoa powder or Dutch-processed cocoa powder.
How to Make Molten Chocolate Lava Cakes
1. Preheat the oven to 425°F (220°C).
2. Let the chocolate melt with the butter in a microwave-safe bowl bowl, stirring every 15-20 seconds until smooth. Set aside to cool slightly.
3. In a small bowl, whisk together the eggs, egg yolks, and vanilla.

4. In a separate bowl, whisk together the powdered sugar, flour, cocoa powder, and salt.
5. Add all the dry ingredients to the egg mixture in a large mixing bowl and gently stir with a rubber spatula or wooden spoon until just combined. If needed, use a whisk to remove any small lumps, being careful not to overmix.

6. Thoroughly butter six 1-cup (6oz / 240ml) ramekins, then lightly flour them, coating the bottoms and sides evenly and tapping out any excess flour.
7. Divide the chocolate cake batter evenly between the prepared ramekins and bake for 11-13 minutes, until the edges look firm and dry while the centers remain soft.

8. Let the cakes rest for 1 minute after baking. Carefully place an inverted plate over each ramekin and turn them out onto serving dessert plates using oven mitts or a kitchen towel.
9. Dust with powdered sugar and serve immediately with ice cream, berries, chocolate fudge sauce, or your favorite toppings.

Ingredients

- 1 cup powdered sugar, sifted
- ¼ cup all-purpose flour, spooned and leveled
- 2 tablespoon unsweetened cocoa powder
- ¼ teaspoon salt
Instructions
- Preheat the oven to 425°F (220°C).
- In a heatproof bowl, combine chocolate and butter and microwave for about 2 minutes, until fully melted. Stir every 15-20 seconds to prevent seizing. Set aside.
- In a small bowl, stir eggs, egg yolks, and vanilla* to combine. Set aside.
- In a medium bowl, whisk powdered sugar, flour, cocoa, and salt to combine. Set aside.
- In a large mixing bowl, combine all ingredients. Using a rubber spatula or wooden spoon, slowly stir just until combined. Use a whisk to remove any lumps, if there are any. The batter will be thick. Set aside.
- Butter and flour six 1-cup-sized (6oz / 240ml) ramekins.
- Spoon batter evenly into the ramekins. Bake for 11-13 minutes. I baked mine for exactly 12 minutes. The edges will look solid and firm and the center soft. Remove from the oven and let stand 1 minute. Then place an inverted plate on top of each ramekin and turn over. Caution: the ramekins are still super hot! Use a napkin or oven mitt. Top with powdered sugar, ice cream, berries, or chocolate fudge sauce to your preference. Serve immediately.
- Store leftovers in an airtight container in the fridge up to 1 day. Reheat in the microwave for about 20-30 seconds. However, they are best eaten fresh on the same day. Freeze up to 3 months.
