This air fryer white fish is cooked over lightly caramelized onion and carrot with diced tomatoes spooned over the top. I like that everything cooks together in one baking pan, so you get tender fish along with vegetables and a light tomato sauce rather than having to make a separate side.

Wolffish is used here, but cod or halibut can also be used if you can’t find it. That makes this air fryer wolffish an easy starting point when you want healthy air fryer fish with vegetables and fish in tomato sauce. Try This Air Fryer White Fish
I like that this isn’t just a plain piece of white fish cooked in the air fryer. The wolffish sits on onion and carrot with diced tomatoes over the top, so you get a little of everything together rather than having to add much once it’s cooked.
The foil also keeps the moisture inside the baking pan while the fish cooks. The finished wolffish is delicate and flaky, with soft vegetables and plenty of tomato flavor underneath, making it a healthy meal with plenty of sodium, protein, fiber, and potassium for anyone to enjoy.
Why You’ll Love It
- One-pan meal: The fish, carrots, onions, and tomatoes all cook in the same baking pan.
- Simple ingredients: There are only a handful of ingredients and spices to prepare.
- Tender fish: Sealing the pan with foil keeps moisture inside while the wolffish cooks.
- Easy to change: Cod, tilapia, or halibut can be used when wolffish isn’t available.
Ingredients

- Wolffish steak: I use an 8-ounce wolffish steak here. It has a delicate texture that works really well with the vegetables and tomatoes, but cod or halibut can also be used if wolffish is difficult to find.
- Carrot: I cut the carrot into small chunks, so it has time to cook before the fish is added. Giving the vegetables that first 5 minutes in the air fryer also lets you decide whether you want them crisp or a little softer.
- Onion: I slice the onion thinly because it needs to cook evenly alongside the carrot and fish. The onion sits underneath the wolffish, so you get some with the tomato juices when serving.
- Canned diced tomatoes: I spoon the tomatoes directly over the seasoned fish before covering the pan. They add moisture and tomato flavor without needing to make a separate sauce. Fresh diced tomatoes can also be used.
How to Make Air Fryer White Fish
1. Preheat the air fryer to 400°F (200°C). Rinse the fish and pat dry with paper towels.
2. Take the thinly sliced onion and carrot chunks and arrange them in the bottom of a baking pan (preferably in a single layer). Sprinkle with a pinch of salt and drizzle with a teaspoon of olive oil.
3. Place the baking dish in the bottom of your air fryer basket and air fry the vegetables for 5 minutes if you want them to remain crispy. For softer vegetables, you can extend the cooking time.
Note: There is no need to spray the baking pan with olive oil, as this is already added to the veggies.

4. After 5 minutes, remove the baking dish from the air fryer and place the fish filets on top of the vegetables. Season with salt and black pepper to taste. Sprinkle the canned diced tomatoes over the fish.
5. Cover the baking pan with aluminum foil, folding the edges to seal it. Place the dish back in the air fryer and bake the vegetables and fish for an additional 15 minutes, depending on the thickness of the fillet.

6. After 15 minutes, your dish is ready. Place fish fillets on a serving plate. Garnish with fresh parsley and serve while hot. Grab your fork, and enjoy your delicious air fryer wolffish!

Recipe Tips
- Always preheat the air fryer before you start cooking.
- Slice the vegetables thinly so they cook evenly with the fish.
- Seal the aluminum foil tightly around the baking pan to keep the moisture inside.
- Season the fish and vegetables well with salt and pepper.
- Give the vegetables longer than 5 minutes during the first cooking stage if you prefer them softer.
- You can switch the recipe up a bit by adding things like garlic powder, ground cumin, onion powder, paprika, or lemon pepper seasoning. It is entirely up to you.
- You can freeze leftovers in the freezer for up to a month; just store them in airtight containers or a ziplock bag. Put them in the fridge to thaw and warm them up in the microwave.

FAQs
Yes. Cod, tilapia fillets, or halibut can be used if wolffish isn’t available. Both are suggested as similar-textured alternatives.
Overcrowding the air fryer basket can hinder proper air circulation, leading to uneven cooking, and not preheating the air fryer, or using too much moisture (like marinades or sauces) can prevent the fish from crisping up.
Absolutely! An air fryer excels at cooking raw fish. Just make sure that it's seasoned and preheat the fryer for optimal results.
