This peaches and cream cake is a delicious vanilla peaches layer cake filled with homemade peach compote and fluffy whipped cream. I always make this when peaches are at their peak.

- Fresh, flavorful peaches: The star of the sponge cake. I always use ripe peaches for the best flavor and the natural sweetness they bring.

How to Make Peaches and Cream Cake
1. Place peaches, sugar, and lemon juice in a large saucepan and bring to a boil over medium heat. Cook for 5-8 minutes until the peaches get soft. Stir constantly.
2. Blend peaches with an immersion blender roughly. Cook another 5-8 minutes or until the filling has thickened and reduced by about ⅓. Stir constantly. Remove from heat and let cool to room temperature. It will thicken as it cools.

3. In a medium bowl, combine flour, baking powder, and salt, and stir to combine. Set aside. In a large mixing bowl of a stand mixer, or using a handheld mixer fitted with a whisk attachment or paddle attachment, beat butter, oil, and sugar until creamy for about 2-3 minutes.
4. Add 1 egg at a time and mix until fully incorporated. Add vanilla to the egg mixture and stir to combine.

5. Alternately add dry ingredients and buttermilk, beginning and ending with dry ingredients. Stir just until combined.
6. Divide the batter equally between the two prepared pans. Bake for 30-33 minutes or until a toothpick in the center comes out clean. Then let it cool to room temperature.

7. In a large bowl, whisk the heavy whipping cream until soft peaks form. Add sugar and whisk at high speed until stiff peaks form.
8. Cut a thin layer off the tops of your cakes to create a flat surface. Then cut each cake in half horizontally. Place one cake layer on a cake stand or serving plate.

9. Spread ¼ of the whipping cream over the cake using the back of a spoon or spatula. Layer with ⅓ of the peach filling. Repeat two more times. Place the last cake layer on top and top with the remaining whipping cream.
10. Refrigerate for 4 hours and store the leftovers in an airtight container in the fridge up to 2 days.

- Whenever possible, use ripe, fresh peaches that smell sweet and feel slightly soft. Hard peaches won’t give you the same flavor.
- You don't need to remove the skin from peaches, but you can if you wish.

- 4 large eggs, room temperature
- 1 tablespoon vanilla extract
- 1 ½ cups buttermilk, room temperature

- 3 cups heavy whipping cream
- ¼ cup granulated white sugar

I made your Fresh Cherry Cake From Scratch recently (delicious BTW). It calls for corn starch for the cherry filling. Does this peach filling also need corn starch?
