I love making a big batch at the start of the week and using it for breakfast, snacks, or even dessert toppings. If you're a quick breakfast fan, you should also try my air fryer French toast for another breakfast idea.

Try This Mixed Nut Granola

If you've only ever bought granola from the store, this homemade version is worth making because of the added nutty flavors. It has a mix of delicious and crunchy oats, with toasted nuts, and you can easily add or take out to suit your taste preference.

Why You'll Love It

  • Easy to make: Just a few simple ingredients are needed for this easy healthy granola breakfast, and it doesn’t take a lot of time, either!
  • Perfect Chewy Texture: You get crunchy clusters with plenty of toasted nuts with each mouthful.
  • Great for meal prep: One batch can last for weeks, so making it ahead is a viable option.
  • Better than store-bought: It is fresh and flavorful with healthy fats, and you can customize it according to your taste, including adding ingredients like dried fruits, pistachios, apricots, cherries, blueberries, and more.

Ingredients

Chewy mixed nut granola recipe ingredients
  • Rolled oats: The main ingredient of the recipe. I always use old-fashioned oats for the best texture, as other types of oats don’t quite give you the same crunch.
  • Peanuts: Gives added crunch and plenty of nutty granola flavor.
  • Pecans: This is my favorite nut in this recipe because they are toasted well, and this gives even more flavor.
  • Almonds: These give some extra texture and balance the sweetness.
  • Maple syrup: Gives the granola a natural sweet taste and helps everything stick together.

How to Make Chewy Mixed Nut Granola Recipe

1. Preheat the oven to 300°F (150°C). Line a large baking sheet with parchment paper and set aside.

2. Roughly chop nuts and toss them with oats and salt in a large bowl, and set aside.

Tip: You can add any of your desired mix-ins and spices now, including extras like green pumpkin seeds (pepitas), macadamia nuts, unsweetened coconut flakes, cinnamon, etc.

3. In a separate bowl, whisk maple syrup, oil, and vanilla until combined.

4. Pour over oats and stir until all the oats are evenly moistened.

5. Transfer to the prepared baking sheet and bake for about 40 minutes.

6. Stir after 20 minutes.

7. Let it cool completely on the baking sheet.

8. Once cooled, put it into an airtight container and store at room temperature up to 3 weeks.

9. Freeze it in freezer bags or containers for up to 6 months.

Cooking Tips

  • Don't chop the nuts too finely. I like having larger pieces throughout the granola, as it is easier to chew.
  • Let the granola cool completely before storing it. This helps it stay crunchy.
  • Store it in an airtight container for best results.
  • Always use fresh ingredients, so it tastes the best.
  • If giving it as a gift, don't make it more than a week in advance, so the person who receives it has time to eat it before it loses flavor.

FAQs

Can I use honey instead of maple syrup?

Yes. I have done this many times, and it works really well. Use the same amount as the maple syrup.

How long does homemade granola last?
