This easy banana bread recipe is one I’d make whenever there are a few overripe bananas sitting around in my pantry that need to be used. You only need a bowl and a whisk for the batter, and there’s no mixer involved.

If you have extra bananas to use, my Banana Walnut Muffins are worth making next. Keep reading because I’ll explain how ripe the bananas should be, why I measure the mashed banana rather than counting bananas, and how to keep the loaf from becoming dense.

Try This Easy Banana Bread
If you usually make banana bread with only mashed bananas, this version is so worth trying, and has become my favorite way to make this recipe.
What I really like about this one is that the bananas aren’t all mashed into the batter. There are chopped banana pieces folded through it too, so you get more banana flavor and little soft pieces throughout the loaf.
I also like adding the halved banana and cinnamon sugar on top. They're optional, but they add a little extra sweetness and cinnamon to the top of the loaf.
Why You’ll Love It
- There’s plenty of banana in it: I don't want banana bread where you can barely taste the banana; then you may as well call it bread. This banana bread with banana chunks uses mashed bananas in the batter as well as chopped bananas folded through it.
- You only need a whisk: There's no creaming butter or getting out the stand mixer or electric hand mixer. I mix everything by hand, which also makes it easier to avoid overmixing the batter.
- It stays moist: Very ripe bananas and oil give this homemade banana bread plenty of moisture. It stays soft at room temperature for several days when stored properly, and no sour cream is needed.
- The topping is optional: I like the cinnamon sugar and banana on top, but you don't need them for the recipe to work. Leave them off when you want to keep things simple. Additionally, you can customize this by making it a banana nut bread; just add some walnuts. Chocolate chips work just as well!
- It freezes well: I like freezing it in individual slices. That way, I can take out exactly what I need instead of thawing the entire loaf.
Ingredients

- Very ripe bananas: I use bananas with lots of black spots, preferably ones that are almost completely brown. They're sweeter and softer at this stage. More importantly, measure out 1¾ cups of mashed banana rather than relying on a certain number of bananas because their sizes vary so much.
- Brown sugar: Either light or dark brown sugar works. I like brown sugar here because it works well with the banana and cinnamon and adds sweetness without needing a huge amount.
- Vegetable or canola oil: Use a mild-flavored oil so it doesn't compete with the bananas. Oil also helps give this moist banana bread recipe its soft texture without needing to cream butter first.
- Chopped bananas: These are separate from the mashed bananas in the batter. Two medium ripe bananas are chopped and folded in at the end, leaving actual pieces of banana throughout the bread.
How to Make Easy Banana Bread
1. Combine flour, baking powder, cinnamon, and salt, and set aside. Then mash the bananas with a fork, and mix mashed bananas and sugar until combined. Then slowly add oil while whisking and stir just to combine.
2. Add eggs, and vanilla, and whisk just until incorporated.

3. Then add the dry ingredients to the wet ingredients and stir just to combine.
4. Fold in banana chunks until evenly combined and transfer to a 9x5x3-inch (23x13x8cm) loaf pan and spread evenly.

5. Top with a halved banana and sprinkle with cinnamon sugar if desired. This is optional but highly recommended. Bake for 55-65 minutes or until a toothpick in the center comes out clean.

Recipe Tips
- Measure the mashed bananas rather than counting them. Bananas vary a lot in size, so three bananas one week might give you a completely different amount from three bananas the next.
- The bananas for the batter should be very ripe. I look for lots of black spots or bananas that are almost completely brown. The browner they get, the sweeter they become.
- If your bananas aren't ripe enough and you can't wait, add 1 tablespoon (15ml) maple syrup to a 1-cup (240ml) measuring cup, then fill the rest with mashed banana. This helps make up for some of the sweetness and moisture you'd get from very ripe bananas.
- Mix the batter by hand with a whisk. An electric mixer makes it much easier to overmix the flour and develop too much gluten, which can leave you with dense, rubbery banana bread.
- Once the dry ingredients go in, stop whisking as soon as they're combined. A few extra turns of the whisk aren't going to improve anything.
- Use a 9x5-inch (23x13cm) loaf pan. The full amount of batter is too much for an 8x4-inch pan and can overflow.
- If an 8x4-inch (20x10cm) pan is all you have, remove enough batter to make 2-3 muffins. Bake those separately for about 15-18 minutes.
- Start checking the loaf at 55 minutes rather than automatically leaving it in for the full 65.
What Can You Serve With This?

- Butter
- Peanut butter
- Honey
- Fresh berries
- Yogurt
- Coffee
- Tea
- Vanilla ice cream
FAQs
You can, but they won't give you the same sweetness as very ripe bananas. If you don't have time to ripen them further, add 1 tablespoon (15ml) maple syrup to a 1-cup (240ml) measuring cup and fill the remainder with mashed banana.
Overmixing is one of the things I try to avoid with banana bread. Once flour is added, too much mixing develops more gluten and can give the loaf a dense, rubbery texture. That's why I use a whisk rather than an electric mixer.
The recipe has too much batter for an 8x4-inch (20x10cm) pan and may overflow. A 9x5-inch (23x13cm) pan is the better size. If you only have the smaller pan, use some of the extra batter to make 2-3 muffins and bake them for around 15-18 minutes.
Yes, and I prefer freezing it already sliced. Once the bread has completely cooled, cut it into slices, wrap each one twice in plastic wrap, and freeze them in a freezer bag or container for up to 3 months.
Recipe

Easy Banana Bread Recipe
Ingredients
- 2 cups all-purpose flour, spooned and leveled
- 2 teaspoon baking powder
- ¼ teaspoon cinnamon
- ½ teaspoon salt
- 1 ¾ cups very ripe bananas, mashed
- ½ cup packed light or dark brown sugar
- ½ cup mild-flavored vegetable or canola oil
- 2 large eggs
- 2 teaspoon vanilla extract
- 2 medium-sized ripe bananas, chopped
Optional topping
- 1 tablespoon granulated white sugar
- ½ teaspoon cinnamon
- 1 medium ripe banana, halved
Instructions
- Preheat the oven to 350°F (175°C). Line a 9x5 inch (23x13cm) loaf pan with parchment paper with an overhang around the edges to easily lift the bread out of the pan after baking.
- In a small bowl, combine flour, baking powder, cinnamon, and salt. Set aside.
- In a large mixing bowl, using a whisk, whisk mashed bananas and brown sugar just until combined. Slowly whisk in oil just to combine. Add eggs and vanilla and stir just to combine. Add dry ingredients and whisk just until combined. Fold in banana chunks. Transfer batter to the prepared pan.
- Optional: In a small bowl, combine sugar and cinnamon. Top the batter with the halved banana and sprinkle with cinnamon sugar if desired.
- Bake for 55-65 minutes or until a toothpick in the center comes out clean with a few moist crumbs attached. Remove from the oven and let cool for 15 minutes. Then remove it from the pan and transfer to a wire rack to cool completely. Store in an airtight container at room temperature up to 3 days or freeze up to 3 months.
Notes
Cooking Time and Temperature
Bake at 350°F (175°C) for 55-65 minutes. Taste & Texture There's a lot of banana flavor in this loaf because you're using both mashed and chopped bananas. The inside stays soft and moist, with little pieces of banana throughout. If you add the topping, you also get a little cinnamon sugar with each slice.Storage, Freezing & Reheating
- Room temperature: Store the banana bread in an airtight container. It will stay soft and moist for up to 4 days.
- Freezer: Once completely cool, slice the loaf and wrap each piece twice in plastic wrap. Place the wrapped slices in freezer bags or containers and freeze for up to 3 months.
- Thawing: Unwrap the slices and leave them on the counter for 1-2 hours.
- Reheating: Microwave an individual slice for 15-25 seconds if you want to serve it warm.
Serving Recommendations
I like this banana bread as it is, especially when the bananas are ripe enough to give it plenty of sweetness. If I'm having a slice for breakfast, I'll usually add a little peanut butter or have it with yogurt and fruit. For dessert, I like warming a slice for a few seconds and serving it with vanilla ice cream.Recipe Variations and Substitutions
- Cinnamon: The batter already has ¼ teaspoon, but the optional cinnamon sugar topping adds a little more cinnamon to the finished loaf.
- Topping: Leave off the halved banana and cinnamon sugar when you want a plain loaf.
- Light or dark brown sugar: Either one works, so I use whichever I already have.
- Oil: Mild-flavored vegetable oil or canola oil can be used. I wouldn't choose a strongly flavored oil because banana should be the main flavor here.
- Less-ripe bananas: If your bananas aren't very ripe, use the maple syrup method above to help replace some of the missing sweetness and moisture.
- Sourdough discard: If you keep a sourdough starter, you can use your discard to make Sourdough Banana Bread instead.
Proper Storage Tips
- Wait until the loaf is completely cool before putting it into an airtight container.
- Keep it covered at room temperature so the cut edges don't start drying out.
- I prefer slicing only what I need if I'm keeping the loaf at room temperature. The whole loaf has less exposed surface area and stays softer.
- If you know you won't finish it within 4 days, freeze the extra slices while they're still fresh.
- Double-wrap individual slices in plastic wrap before freezing them.
- Don't forget to unwrap frozen slices before leaving them on the counter to thaw.
Pro Tips
- Measure exactly 1¾ cups of mashed banana instead of guessing based on the number of bananas.
- Wait for very ripe, heavily spotted bananas whenever you can. They're much better suited to this recipe than firm yellow ones.
- Use a whisk and mix the batter by hand.
- Add the oil slowly while whisking it into the banana and brown sugar mixture.
- Once you've added the flour mixture, whisk only until everything is combined.
- Fold the chopped bananas in rather than stirring the batter heavily.
- Use the recommended 9x5-inch (23x13cm) pan so the batter has enough room.
- Line the pan with enough parchment overhang to give yourself something to hold when removing the loaf.
- Start testing the middle after 55 minutes. A few moist crumbs on the toothpick are fine.
- Give the loaf its full 15 minutes in the pan before removing it, then let it finish cooling on a wire rack.

Just made this banana bread today. I used 1 cup unbleached AP flour and 1 cup Whole Wheat bread flour, 1 tsp baking soda + 1 tsp baking powder, 1/2 cup melted butter and less than 1/2 cup molasses sugar. The rest followed her recipe and turned out good. Thanks for sharing.

I accidentally omitted the brown sugar.... simply forgot. What a happy accident! It was superb. I added the chocolate chips and two scoops of PBFit and tripled the cinnamon (I love cinnamon). It was extraordinary!
Patti
My family doesn’t like chunks in bread. Could I make this without the chunks of banana?
Sabine
Yes, absolutely!

Really loved the cake so much, although i used 350 grams of brown sugar instead of 100 grams (to make it more of a cake rather than a bread) and also used a round pan instead. Looks and smells amazing with the halved bananas on top with the sugar and cinnamon!
Chris
I can't tell how much I love this recipe!! So easy and so damn delicious. I will never make any other banana bread anymore. Thanks!!
Sabine
I'm happy that you love this recipe as much as I do, Chris! Thank you so much for your feedback!

Can I use 8.5 x 4.5 pan instead?? Do I need to reduce amount of batter?
Sabine
That is absolutely fine! You don't need to reduce the batter but maybe you need to bake it a couple of minutes longer. Check with a toothpick.
