This Lebkuchen cookies recipe is one of those recipes I love making any time of the year. The smell of warm spices and honey is what makes this recipe so appealing. I never grew up making traditional German cookies, but once I baked these, they quickly became one of my favorite baking recipes.

  • Honey: This is what gives lebkuchen their signature flavor and the softest texture. I wouldn’t swap it out for anything as it is what makes the recipe.
  • Ground almonds: These add moisture and a slightly nutty flavor. I’ve tried leaving them out before, and the cookies just weren’t as good.
  • Warm spices: Cinnamon, nutmeg, cloves, and ginger are what give these cookies their delicious flavor. I sometimes adjust the amount slightly depending on how strong I want them to taste.
  • Flour: You need just enough to hold everything together without making the cookies dense.

How to Make Lebkuchen Cookies

1. In a small saucepan over low heat, warm the honey, brown sugar, and butter until the mixture is melted and smooth. Remove from heat and let cool slightly.

2. In a bowl, whisk the egg and vanilla extract. Stir in the cooled honey mixture.

3. In another large bowl, whisk flour, ground almonds, baking powder, cinnamon, nutmeg, cloves, ginger, and the salt.

4. Add the dry ingredients to the wet mixture and stir until a soft dough forms. Fold in candied orange peel if you are using this ingredient.

5. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Drop tablespoon-sized portions of dough onto the baking sheet, making sure you space them slightly apart.

6. Bake for 12 - 14 minutes until the cookies are set and lightly golden.

  • I always keep an eye on the baking time for this recipe, as overbaking is the quickest way to lose that soft texture.
  • If the dough feels sticky, let it rest for a few minutes.
  • Sometimes I skip the glaze and dip them in chocolate instead for a chocolate finish.

Yes, just use a good gluten-free flour blend. I’ve tested it before, and it still works well, especially because of the ground almonds.

Ingredients
  

  • ½ cup honey
  • ¼ cup brown sugar
  • 2 tablespoon unsalted butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup finely ground almonds
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • 2 tablespoon finely chopped candied orange peel (optional)

For the Glaze (optional)

  • 1 cup powdered sugar
  • 2 tablespoon lemon juice

Instructions

  • Warm honey, brown sugar and butter until melted and smooth.
  • Mix egg and vanilla, then stir in honey mixture.
  • Combine dry ingredients separately.
  • Mix everything into a soft dough.
  • Drop onto baking sheet.
  • Bake until lightly golden.
  • Cool and glaze if desired.
