Learn How To Make Coconut Mango Muffins
This is one of my favorite muffin recipes. I really like the combination of mango and coconut in these muffins because neither flavor takes over. So easy, because most of the igredients are usually available in your pantry.
The mango keeps them soft and adds little sweet pieces throughout, while the coconut gives them a bit of texture. They’re especially good when the mango is really ripe and juicy for extra tropical fragrance.
Why You’ll Love This Recipe

- Beautiful golden muffin tops: The light sugar sprinkle and hot oven give these muffins that classic bakery-style top that’s slightly crisp on the outside. It’s the kind of muffin top everyone reaches for first.
- Tropical mango and coconut flavor: The combination of juicy mango and coconut milk creates a warm, tropical flavor that is delicious overall. It’s a nice change from more traditional muffin flavors.
- Soft, moist interior: Thanks to the coconut milk and butter, the muffins stay tender and moist without feeling heavy. Even the next day, they still taste fresh.
- Perfect for breakfast or snack boxes: I love making a batch and keeping them on hand for quick breakfasts, afternoon snacks, or lunchbox treats.
Ingredients & Substitutions

- Fresh Mango: Fresh ripe mango gives the best sweetness and juicy texture. I’ve also used frozen mango before — just thaw it and pat it dry so it doesn’t add too much moisture to the batter.
- Coconut milk: This adds a subtle coconut flavor and helps keep the muffins moist. Regular milk works if needed, but the coconut milk really brings out the tropical taste.
- Shredded coconut (Coconut Streusel): Either sweetened or unsweetened coconut works. I tend to use unsweetened so the muffins don’t become overly sweet. Coconut and spices give the muffins extra texture. Coconut flakes work as well, bt shredded works best.
- Butter: Melted butter gives richness and flavor, but coconut oil is a great substitute if you want to highlight the coconut flavor even more.
Instructions
1. Prepare the Oven - Preheat the oven to 400°F (200°C). Line a muffin tin with paper liners or lightly grease it.
2 - Mix Wet Ingredients - In a medium bowl, whisk melted butter and sugar until smooth. Add eggs and whisk well. Stir in vanilla extract and coconut milk.
3 - Combine Dry Ingredients - In another large bowl, mix flour, baking powder, baking soda, and salt.

4 - Make the Batter - Add dry ingredients to the wet mixture and gently mix until just combined. Fold diced mango and shredded coconut into the muffin batter using a rubber spatula.
5. Fill the Muffin Tin - Divide batter evenly into muffin cups, filling about ¾ full. Sprinkle a little sugar on top of each muffin to help create a golden crust.

6. Bake - Bake for 18 - 22 minutes until muffins are beautifully golden, and a toothpick inserted comes out clean.
7 - Cool - Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool to room temperature.

How To Cut Mango In Cubes
This is honestly the easiest way I’ve found to cut mango without wasting any of that good flesh. Once you get used to it, it takes less than a minute.
1. Slice off the outer edges first - I start by cutting a thin slice off each side of the mango — just the outer edges. This gives you a flat surface so the mango doesn’t roll around while you’re cutting.
2. Stand it up and slice around the pit - Then I stand the mango upright and slice down along one side of the pit, keeping the knife as close as possible. Do the same on the other side. You’ll end up with two large sections.

3. Trim off the remaining flesh - Now take the center piece with the pit and carefully cut off any remaining mango flesh around it. I try to get as close as possible here — there’s always more mango on there than you think.
4. Cut into strips, then small cubes - Take your mango pieces and slice them into strips, then turn and cut again into cubes. I like keeping them slightly chunky so you get those nice juicy bites in the muffins.

5. Keep them firm and ready to fold in - If the mango is very ripe, I handle it gently so it doesn’t break apart. Slightly firm mango works best here — it holds its shape when you mix it into the batter.
Another fun treat to try is homemade Kit Kat bars — simple, crunchy, and totally addictive.
Pro Cooking Tips
- Start with a hot oven: I’ve found starting muffins at a higher temperature helps them rise quickly and develop those beautiful bakery-style tops.
- Don’t overmix the batter: I mix just until the ingredients come together. Overmixing can make muffins dense instead of light and fluffy.
- Use ripe mango: The sweeter and juicier the mango, the better the muffins taste. Slightly underripe mango won’t give the same flavor.
- Sprinkle sugar on top: This small step creates that lightly crisp golden crust that makes muffins feel bakery-quality.

Yes, and it works really well. I like sprinkling a little extra shredded coconut on top before baking, so it toasts slightly in the oven.
Absolutely. Mini muffins bake much faster, usually around 10 - 12 minutes. I just keep an eye on them and test with a toothpick to be sure they’re done.
