Let’s take snacking to the next level with these 5 Ingredients Raspberry Cashew Bites. They are super easy to make, healthy, sugar-free, and unbelievably delicious.

  • 1 cup cashew nuts (130g)
  • 1 cup freeze dried raspberries (30g)
  • 3 tbsp maple syrup
  • 1 vanilla bean
  • 1 1/4 cups oats (150g)
  1. Soak cashew nuts in water overnight. 

  2. Drain cashews the next day and grind in a food processor until no more lumps remain. Add raspberries, maple syrup, and vanilla* and grind until fully incorporated. Transfer to a bowl. Add oats and stir with a spoon to combine. Form 18 equal sized balls. Store in an airtight container at room temperature up to one week.

  3. OPTIONAL: Roll balls in chopped cashew nuts, coconut flakes, oats, or cocoa.


*First, cut off the straight end of the vanilla bean. Then place the tip of your sharp knife below the curled end and cut the vanilla bean through the middle of the bean lengthwise. Although you don't need to cut it all the way through, it's ok when you do so. Then open the vanilla bean and scrape out the flavorful seeds with the back of your knife. Then just use the seeds.
